I have two relatively old tube amps, a JCM800 2204 from 1982 and a newly acquired Silverface Twin Reverb from 1974.

Both have new tubes but are there any other things I should replace that haven't been replaced since purchase to get the best out of these amps?

Thanks a lot.

If it ain't broke don't fix it.....

but if you must then electrolyte filter caps are the likely suspects.

There's a pretty good chance the filter caps are shot.

I have an '85 4104 (2204 combo) that I took in for a cap job. It came back as a whole new amp. I hadn't realized how much of a difference it could make. Much more articulate, now. Also it was damn near silent, with no guitar plugged in (what I consider a test for amp noise with no variables, beyond electrical surroundings) and everything dimed.
Caps, definitely. For safety of amp and quality of sound.

Definite +1 on the cap job. Even though they may be perfectly functional, after 30 years, it's a good insurance policy. You should have 3x 50/50uF can caps in there (the 2204). F&T's are good and can be had for about $15 a pop. If you're feeling particularly resourceful, this is an easy one to do yourself. Be sure to read up on cap discharging safety! Don't just go off touching them without draining them!!

just the caps as stated above. Old caps can suck frequencies right outta your tone.

I was amazed (won't use 'shocked' in this context...;)) at just how true this was!! Don't go nuts on them, but don't skimp, either. It's only once every 10-15 yrs or so.
